- 1½ cups fresh strawberries, hulled (or 1½ cups frozen strawberries)
- 1 cup plain yogurt (whole milk or Greek yogurt)
- ½ cup whole milk (or milk of choice)
- 2-3 tablespoons honey or sugar (adjust to taste)
- ½ cup ice cubes (omit if using frozen strawberries)
- ⅛ teaspoon ground cardamom (optional)
- ¼ teaspoon rose water (optional)
- Fresh mint leaves for garnish (optional)
Instructions
- Prepare your strawberries: If using fresh strawberries, wash them thoroughly, remove the green tops and stems, and roughly chop them into halves or quarters. If using frozen strawberries, no preparation is needed—just measure and add directly to the blender.
- Add ingredients to blender: Place the strawberries, yogurt, milk, sweetener (start with 2 tablespoons), and ice (if using) into your blender. If you’re using the optional cardamom or rose water, add those now as well.
- Blend until smooth: Blend on high speed for 30-60 seconds until the mixture is completely smooth and creamy with no visible chunks of strawberry or ice. The color should be a beautiful, uniform pink.
- Taste and adjust: Stop the blender and taste your lassi. Does it need more sweetness? Add another tablespoon of honey or sugar and blend briefly. Too thick? Add a splash more milk. Too thin? Add a few more ice cubes or a spoonful of yogurt.
- Blend again for frothiness: For that authentic lassi texture with a lovely frothy top, blend for an additional 15-20 seconds. This incorporates air and creates that signature foam.
- Serve immediately: Pour the lassi into tall glasses, garnish with a fresh strawberry or mint leaf if desired, and serve right away while it’s cold and frothy. If you’d like, add a straw and enjoy!
Notes
- Consistency tip: Lassi should be thicker than a regular smoothie but thin enough to drink easily through a straw. If it’s too thick to pour, add milk 2 tablespoons at a time.
- Make it dairy-free: Use coconut yogurt or cashew yogurt, and substitute the milk with your favorite plant-based milk.
- Sweetener adjustments: The sweetness needed varies based on your strawberries. Ripe, in-season berries need less sugar than tart winter strawberries.
- Traditional touch: For authentic Indian flavor, add a tiny pinch of black salt (kala namak) along with the cardamom—it sounds odd but creates a wonderful depth!
- Storage: Best enjoyed fresh, but can be refrigerated in an airtight container for up to 24 hours. Shake or stir well before drinking as separation is natural.
