This copycat Starbucks Strawberry Acai Refresher tastes just like the real thing but costs a fraction of the price! Made with white grape juice, green tea, acai, fresh strawberries, and topped with creamy coconut milk, it’s refreshing, lightly caffeinated, naturally sweet, and absolutely gorgeous. Perfect for hot summer days or anytime you’re craving that Starbucks Pink Drink experience at home!

  • Total Time: 10 minutes (plus tea cooling time)
  • Yield: 1 large serving (16-20 oz) or 2 small servings 1x

Ingredients

Scale

For the Refresher Base:

  • 1 cup white grape juice (100% juice)
  • ½ cup brewed green tea, cooled completely
  • 1-2 teaspoons acai powder (or 2 tablespoons acai juice)
  • 4-6 fresh strawberries, hulled and sliced (or ½ cup frozen strawberries)
  • 1-2 teaspoons honey or simple syrup (optional, adjust to taste)
  • to 2 cups ice cubes

For Assembly:

  • 2-3 tablespoons freeze-dried strawberries, broken into pieces
  • ¼ to ½ cup coconut milk (canned or carton—shake well before using)
  • Optional: Fresh strawberry slices for garnish
  • Optional: Fresh mint leaves for garnish

Instructions

  • Brew and Cool the Green Tea: Brew ½ cup of strong green tea using 1-2 green tea bags and hot water. Let it steep for 3-5 minutes, then remove the tea bags. Allow the tea to cool to room temperature or chill it in the refrigerator for faster cooling (about 15-20 minutes). You can also make tea ahead of time and keep it refrigerated for up to 3 days. Cold tea is essential—hot tea will melt your ice immediately!
  • Prepare the Refresher Base: In a large pitcher or mixing container, combine the cooled green tea, white grape juice, and acai powder (or acai juice). Whisk or stir vigorously until the acai powder is completely dissolved with no clumps—this may take 30-60 seconds of stirring. The mixture should turn a beautiful pink-purple color. Taste and add honey or simple syrup if you’d like it sweeter, stirring to dissolve completely.
  • Add Fresh Strawberries: If using fresh strawberries, hull and slice them into thin pieces. Add them directly to the refresher base mixture. For even more intense strawberry flavor, you can muddle (gently crush) 2-3 strawberry slices in the bottom of your serving glass before adding the refresher. If using frozen strawberries, add them directly—they’ll help keep your drink cold!
  • Assemble Your Drink: Fill a tall glass (16-20 oz) with ice cubes, filling it about ¾ full. Pour the strawberry acai refresher base over the ice until the glass is about ¾ full, leaving room at the top for coconut milk. Add 2-3 tablespoons of freeze-dried strawberry pieces—they’ll float beautifully and rehydrate in the liquid, adding texture and flavor.
  • Add the Coconut Milk: Shake your coconut milk well before measuring (the cream separates from the liquid). Slowly pour ¼ to ½ cup of coconut milk over the back of a spoon held just above the drink’s surface. This creates those gorgeous swirls and layers that make the Pink Drink so visually stunning. Don’t stir yet—admire those beautiful layers! The coconut milk will naturally swirl and create a marbled pink-and-white effect.
  • Garnish and Serve: Add a fresh strawberry slice to the rim of the glass or drop a few into the drink for extra visual appeal. A sprig of fresh mint adds a pop of color and subtle aroma (optional but pretty!). Insert a wide straw—part of the fun is seeing the strawberry pieces and pink-white swirls as you drink.
  • Stir and Enjoy: Before drinking, give your refresher a gentle stir to incorporate the coconut milk throughout. Sip slowly and savor that refreshing, fruity, lightly sweet flavor with the perfect amount of strawberry pieces in every sip. Enjoy immediately while cold!

Notes

  • Make the base ahead: Mix the tea, juice, and acai in advance and refrigerate for up to 3-4 days. When ready to serve, just pour over ice, add strawberries and coconut milk!
  • Acai powder dissolves better in liquid: If it’s clumping, whisk more vigorously or blend the base in a blender for 10 seconds.
  • Adjust sweetness: White grape juice is naturally sweet, but taste your base before serving. Add sweetener only if needed.
  • Freeze-dried strawberries are key: They create that authentic Starbucks texture. Don’t skip them if you want the real experience!
  • Coconut milk options: Canned is creamier; carton is lighter. Both work great—choose based on preference.
  • Scale up easily: This recipe multiplies beautifully. Make a large pitcher for parties or family gatherings.
  • Caffeine content: Contains about 25-35mg caffeine per serving from green tea—roughly ¼ the caffeine of regular coffee.
