For Each Individual Serving:
- 1 to 2 shots espresso (about ¼ to ⅓ cup) or ½ cup strong brewed coffee, cooled slightly
- ¼ cup pumpkin puree
- ½ teaspoon vanilla extract
- ½ teaspoon pumpkin pie spice
- 1 to 2 tablespoons maple syrup or brown sugar syrup (adjust to taste)
- ¾ cup milk of choice (whole milk, oat milk, almond milk, etc.)
- ½ cup ice cubes
- Whipped cream for topping (optional)
- Caramel drizzle for topping (optional)
- Tiny pinch of pumpkin pie spice for garnish (optional)
Instructions
- In a tall glass or latte glass, combine the pumpkin puree, vanilla extract, pumpkin pie spice, and maple syrup. Whisk or stir very well until everything is completely smooth and combined. Make sure there are no lumps of pumpkin remaining. This creates your pumpkin spice base.
- Brew your espresso shots or strong coffee and let cool for 1-2 minutes. You don’t want it boiling hot when it hits the cold milk, but it should still be warm enough to blend flavors beautifully.
- Pour the warm espresso or strong coffee directly into the glass with the pumpkin mixture. Stir well, making sure the coffee combines with all the pumpkin and spices.
- Fill the glass about halfway with ice cubes. Pour the cold milk over the ice and coffee mixture. Stir very well to combine everything uniformly, or leave it slightly layered for a beautiful ombré effect.
- Top with a generous dollop of whipped cream if desired, then lightly drizzle with caramel sauce and sprinkle with just a tiny pinch of pumpkin pie spice for a gorgeous finishing touch.
- Insert a stirrer or spoon and serve immediately. Enjoy your café-quality iced pumpkin spice latte!
Notes
- For extra-smooth pumpkin mixture, blend the pumpkin puree, vanilla, pumpkin pie spice, and syrup together in a small blender before adding to the coffee.
- Make a big batch of pumpkin spice base (multiply the pumpkin, vanilla, spice, and syrup amounts by the number of servings) and store in the refrigerator for up to one week. Then simply brew fresh espresso and assemble drinks whenever you want one.
- For a stronger coffee flavor, use two shots of espresso instead of one.
- For a sweeter drink, add more maple syrup to taste.
- Cold brew concentrate works beautifully instead of hot espresso—simply use about ⅓ cup cold brew concentrate instead of the espresso shots.
